DINNER - NIGHT TWO: Rigatoni with Eggplant Sauce
Up to two nights later, chop leftover casserole coarsely, then toss it with leftover tomato sauce and mix with cooked rigatoni for a great pasta dish. Serve with a tossed salad and bread (optional).
