Continued from page 1 To serve: Let sherbet stand at room temperature for 10 mins. for easier scooping. *************************** Have fun - Remove rind from cantaloupe. Slice into rings. Place on glass plate and place a scoop of lime or pineapple sherbet in center. Place a few mint leaves around ring - Refreshing as a summer rainfall! - but much tastier. ***************** or Remove rind from cantaloupe. Slice in rings, then slice in half. Place on lettuce-lined salad plates and drizzle with French dressing and crumbled Camembert cheese. ***************** Would you like to wow your guests? Cut a cantaloupe lengthwise into six sections with knife. Remove seeds. Loosen melon and cut it into small sections, but do not remove. Fill with fresh cut watermelon, ruby red strawberries, just-picked raspberries, tropical pineapple and a few kiwi slices. Place in center of plate and surround with finger or tea sandwiches. or Cut a cantaloupe in 6 lengthwise sections. Remove seeds. Remove fruit with a small knife. Soak fruit in a light fruity wine for about an hour. Replace fruit and accent with mint leaves. Serve as a salad on watercress-lined small plates. ****************** Peel cantaloupe, cut in half and remove seeds. Slice into strips. Toss with prosciutto and serve as a meat accompaniment. ****************** or just serve plain. It is sweet, juicy and smooth. Use cantaloupe to decorate your food, as a part of a meal, and even as dessert with ice cream or sherbet. Take advantage of this beautiful fruit. Continued from page 1 For special guests - 1 can frozen pink lemonade, ice cubes, 1/ 2 cup white rum or tequila Fill a blender 2/3 full with ice cubes. Add 6-oz. can frozen pink lemonade, and rum or tequila. Blend for 2 mins. Pour into glasses and garnish with a twist of lemon rind on top. ********************* Country Lemonade - 2 lemons, thinly sliced, 1/2 cup sugar, 4 cups boiling water, ice cubes In a heatproof pitcher, place sliced lemons and sugar. Pour in boiling water and stir until sugar is completely dissolved. Refrigerate until chilled. To serve - pour mixture over ice cubes and serve. ********************* STRAWBERRY LEMONADE 3 cups water, 1 cup lemon juice, 1 cup sugar, 2-1/2 cups fresh strawberries, red food coloring, crushed ice, sliced strawberries/lemon slices for garnish Put 1 cup of water, lemon juice, sugar, and all berries in a blender. Blend until mixture is pureed and sugar is completely dissolved. In a pitcher, combine strawberry/lemonade mixture with remaining 2 cups of water and a few drops of red food coloring; mix well. Add crushed ice, and garnish with sliced strawberries and lemon slices. Instant Refreshment! ************************** Fast and Easy 4 cups water, 1 cup lemon juice, 2/3 cup sugar, ice cubes In a pitcher, combine water, lemon juice and sugar. Stir until sugar is dissolved. Serve over ice cubes in chilled glasses. ******************** Really in a pinch - frozen pink or regular lemonade kept in freezer for those “emergency” situations - too hot, too tired, too drained - with just enough strength to pull that white strip from around that little can and place in a pitcher and add water. Oh! pain of waiting for it to dissolve but when it does - relief at last! However you serve it - there’s just one very important thing to remember about lemonade - ENJOY! ©Arleen M. Kaptur 2002 May
