Preparation:

Pour tablespoonful of olive oil into frying pan and gently heat up oil.

Now place fish fillet into frying pan and fry fillet on both sides until cooked.

Remove cooked fillet onto serving dish, leaving excess oil in frying pan.

Add crushed black peppercorns into remaining oil in frying pan and turn up heat slightly and stir fry until you smell distinctively and spicy aroma rise from pan.

Add oyster sauce into frying pan and continue to stir. Add a little water if sauce appears too thick. It should be slightly runny.

Add sugar to give it that little taste of sweetness to tame pepper.

Lastly, add cooking wine / sherry to give it final sweet peppery flavour.

You are now ready to pour hot mixture over cooked fillet and serve.
